• 1 Tsp. Omega Foods The Better Olive Oil
  • 3/4 C. Fresh Mushrooms, sliced
  • 3/4 C. Zucchini, chopped
  • 1/2 C. Red Bell Pepper, chopped
  • 1/2 C. Red Onion, thinly sliced
  • 1-24 oz. jar of Omega Foods Marinara Culinary Sauce
  • 2 TBSP. Pesto
  • 1 (15 oz.) container of Ricotta Cheese
  • 6 Lasagna noodles, cooked a dente’ and cut in half 3/4 C. shredded mozzarella cheese


Preheat oven to 375*F. Heat Olive oil in a medium saucepan over medium heat. Add mushrooms, zucchini, red bell peppers and onion; sauté for 5 min. stirring frequently. Add Culinary Sauce, simmer for 10 min. Combine pesto and ricotta in a small bowl. Spread 1/2 cup sauce mixture in the bottom of 8” square baking dish coated with cooking spray. Arrange 6 noodle halves over sauce mixture. Top noodles with half of ricotta mixture and 1 C sauce mixture. Repeat layers, ending with noodles. Spread remaining sauce mixture over noodles; sprinkle with mozzarella. Cover and bake at 375*F for 30 min. Uncover and bake an additional 20 min. Let stand 10 min. Makes 6 servings.
